美しい海、志々伎湾が目の前に広がる平戸島最南端にある400年の伝統を持つ福田酒造。近くには霊峰志々伎山があり、この志々伎山を御神体のひとつとした、志々伎神社がある。志々伎神社は十城別命を祭る。時は神功皇后の頃、十城別王がここに残り、日本の西の要としてこの地を守り志々伎山頂にて西海鎮護を祈願したと言われる。
1000年以上前から異国へと開かれていたこの場所は、今もなお豊かな自然と人のあたたかさ、かつての繁栄による秘められた物語、これらが相まってとても魅力的な場所だ。
今回、ご縁あってこの福田酒造さんの物語を作るお手伝いをすることになった。海から頂いたもの、そして、海と生きてきた人々の生命への鮮烈な営みが酒造りを支えてきなのではないかと、先日の滞在で直感が動いた。ここ志々伎の海で確かに存在する、豊かな目に見えぬものたちが今何を伝えたいのか、そこにある見えない声を、五感と心を使い、探してみようと思う。…私は 斎女のような役目を授かったと思っている。

Prologue: Dialogue with Invisible things
Fukuda Brewery has 400 years of history, located in the southernmost part of Hirado Island. Shijiki Bay, a beautiful sea, is in front of this brewery. There is a secret mountain called Mt. Shijiki, one of the secret things that belonged to the Shijiki Shrine. The Shijiki Shrine is dedicated to Tokiwake, His Highness. At the time of Empress Jingu, she ordered Tokiwake, His Highness, to live here. It is said that he prayed for the protection of the Western Sea, the most important place in the west.
This place was opened to foreign countries about 1,000 years ago. It’s still a very attractive place, with its rich nature, warmth of people and hidden stories by its former prosperity. There is the quiet presence of beliefs of the people who live with the sea. At this moment, I’m here to lend a hand with the story creation of Fukuda Brewery in an unexpected twist of fate.
…The things we are receiving from the Sea and the vivid life activities of people who have lived together with the sea may have supported the brewing of sake. The recent research led me to the intuition. What do the rich, invisible things that surely exist in the Shijiki Sea, want to tell us now? Let’s try searching for these concealed voices using our five senses and hearts. I believe that I was given the role of a priestess, Itsukime.

Lovely Brothers of Fukuda Brewery
The oldest brother is taking care of Sake while the youngest one is taking care of Sweet Sake used as seasoning. They have been producing this rice together without any pesticides. They’re planning to create a new era for Fukuda Brewery. It would be a great key to the revival of this beautiful southernmost part of Hirado.✨🤞
